My PhD work aims to characterize disparities in access to plant-based diets. My first aim will leverage the Global Dietary Database to describe global, regional, national, and within-country factors that associate with individual plant-based food consumption within youth aged 0-19. My second aim will use 24-hour dietary recalls from the National Health and Nutrition Examination Survey (NHANES) to characterize the quality, trends, and disparities in consumption of healthy and minimally processed plant-based diets in youth 1-18 years of age in the United States. Lastly, I will implement a nutrition and food security screener into the electronic medical record (EMR) of patients under 5 years of age treated at Tufts Medical Center and assess qualitatively and quantitatively how referral to and enrollment rates in Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) change.
